Why ADE says no to commercial-grade appliances

Scale is the tell. The handbook allows home economics equipment at countertop scale and explicitly prohibits commercial, industrial, and professional-grade versions — freeze-dryers, espresso machines, dehydrators are its named examples. ADE's reasonableness test asks whether cost and quantity exceed what meets the educational need; commercial-grade equipment answers that question against you by definition.

The mistake families make

The quality upgrade. "If we're teaching baking anyway, the professional mixer will last longer." The curriculum doc that justifies a countertop mixer does not stretch to cover its restaurant-grade cousin — the grade of the equipment, not the subject, is what's being tested.

The allowable path nearby

Countertop home-ec appliances — stand mixers, sewing machines, ordinary cooking and baking equipment — are Tier 2 allowable with a five-element curriculum document. Buy the home version, document the course, and the same lesson plan works.
